This is not something we'll be adding into the roadmap. FARMING is focused on new farming techniques, foods and recipes. There are several reasons why we stopped at adding logs:
Once we start adding new planks, it will deviate away from the purpose of farming.
There is no supported way of adding slabs, fences, fence gates or stairs, which will lead all of these to be janky implementations that do not feel good. For a feature that is not part of the core gameplay it'll make the add-on buggier and won't help in farming.
Mojangs rules around add-ons mean we can't create add-ons with dependencies, for example we could not create an addon that needs to have FARMING installed to work.
